Traditional checkerboards are predictable. This board is something different.

The scattered chess pattern uses the same checkerboard DNA — alternating light and dark squares — but breaks the rhythm with deliberate variations in spacing and placement. The result feels organic rather than mechanical, like a chess game mid-play rather than a board waiting to be used.

Every square is individually cut and glued by hand in our Polish workshop. Because it's end-grain, each block reveals its own unique pattern of annual rings when sanded — meaning every square on every board is visually one of a kind.

Sapele — a premium African hardwood from the mahogany family, prized for its rich reddish-brown colour and shimmering ribbon-figure grain. Naturally resistant to moisture and full of character.

Unlike face-grain or edge-grain boards, end-grain cutting boards receive the knife blade between wood fibres — not across them. The fibres part, then close back up after every cut. Care Instructions

Your board arrives pre-oiled, pre-waxed, and ready to use. With minimal upkeep, it will last a lifetime.

✅ Do

  • Wash by hand — warm water and a small amount of mild soap
  • Dry immediately — stand upright or lay flat on a rack; never leave wet on a surface
  • Re-oil every 1–2 months — apply food-grade mineral oil generously to keep both woods nourished and looking their best
  • Re-wax occasionally — a thin coat of beeswax every few months keeps the surface sealed and the colours rich
  • Revive if needed — if the surface ever feels rough, a light sand with 220-grit paper followed by oiling restores it completely

❌ Don't

  • No dishwasher — ever. Heat and prolonged moisture will crack and warp the board irreversibly
  • No soaking — never submerge or leave standing in water
  • No direct sunlight — extended exposure can fade the sapele's reddish-brown tone over time

💡 Sapele naturally deepens to a richer reddish-brown with age and regular oiling — a transformation that makes the chess pattern contrast more striking, not less.

Is the board ready to use straight out of the box?

Yes. Every board is finished with multiple hand-applied coats of food-safe mineral oil and beeswax before it ships. No prep needed — unbox, admire, and start cooking.

What's the difference between a checkerboard and a scattered chess pattern?

A traditional checkerboard follows a strict alternating rhythm — light, dark, light, dark — in perfect repeating rows. The scattered chess pattern uses the same two-wood contrast, but intentionally breaks the rhythm with deliberate variations in spacing and block placement. The result feels more organic and dynamic — like a chess game mid-play rather than a board waiting to be used.

What is sapele, and is it safe for food contact?

Sapele is a premium African hardwood from the mahogany family, prized for its rich reddish-brown colour, shimmering ribbon-figure grain, and natural durability. When properly finished with food-safe mineral oil and beeswax — as every MNCWOOD board is — sapele is completely safe for all food contact.

Can I cut raw meat on it?

Absolutely. End-grain boards are the preferred surface for all types of food prep including meat — easy to sanitise, naturally hygienic, and built to handle heavy use. Wash with warm soapy water and dry immediately after.

Why end-grain instead of face-grain or edge-grain?

End-grain construction means the knife enters between wood fibres rather than cutting across them. The fibres close back up after each cut — the surface self-heals, your knives stay sharper for longer, and the board improves visually with age rather than deteriorating.

Will the colours change over time?

Yes, and beautifully. Sapele naturally deepens to a richer reddish-brown with age and regular oiling. Ash develops a warmer golden patina. The two-wood contrast remains striking — many owners say their board becomes more beautiful every year.

Why the near-square format?

The 335 × 310 mm near-square shape gives you a generous, balanced workspace without favouring any direction. It's ideal for rotating prepped ingredients to one corner while you keep cutting — and visually, it frames the scattered chess pattern more effectively than an elongated rectangle would.

The laser engraving is deep and permanent — it won't fade with oiling or normal use. Treat the engraved area exactly the same as the rest of the board.
